Hula Kalua Pork

The pork is the star in this dish. Slow-smoked and caramelized with Hawaiian BBQ sauce, sumptuous pork collar is accompanied by banana chips and quick-pickled cucumbers. Try this at RC’s BBQ right outside the Grandstand on West Dan Patch Ave. between Liggett and Chamber Streets.

Pot of Gold Potato Dumplings

An Irish take on an Asian classic, this collaboration between O’Gara’s and Saturday Dumpling Co. creates this amazing fried treat of cheesy, garlic mashed potatoes wrapped in a flaky pastry treat served with a side of Top the Tater® chive onion sour cream dip. Um, yes please! This can be found at O’Gara’s at the Fair at the corner of Dan Patch Ave. and Cosgrove St.

Cherry Bigfoot Limeade Float

Calling this a food might be a stretch but no one can argue that this is not delicious. What better way to cool off on a hot August, Minnesota day than a refreshing, tart, and COLD Cherry Bigfoot Limeade Float. Located at the corner of Dan Patch Ave. and Underwood St., Tasti Whip is your destination for many chilly treats.

Somali Street Fries

Loaded fries with an international flair. Hot, crispy fries are topped with Somali beef suqaar, a combination of spiced beef, cheese, vegetables, and spices, along with white garlic and green jalapeno sauces. This is only available until Tuesday, August 26th at the Midtown Global Market’s Oasis Grill & Hoyo Sambusa in the International Bazaar right off Judson Ave. across from the Agriculture Horticulture Building.

Caprese Curds

An Italian take on this Minnesotan staple, golden and gooey fried cheese curds are served atop freash and vibrant diced tomatoes and diced basil with sweet and tart balsamic glazed drizzled on top. Plus, a side of crunchy crostini is provided to help in scopping all that goodness. You can find these treats at Lulu’s Public House tucked away in the back side of fairgrounds next to the Schilling Ampitheater.

Timber Twists

Do you love stuffed manicotti but felt it was a little too tame? Giggles’ Campfire Grill has cranked this Italian classic up a notch with the standard manicotti shells filled with a mixture of Italian sausage and mozzarella but replaces ricotta with cream cheese and marinara with BBQ sauce. To top it off, they have wrapped it all in bacon and smoked in a wood-fire grill and paired with their signature BBQ sauce. Giggles’ is located on Cooper St. in The North Woods.

Chicken-Fried Bacon Fries

Everyone knows that you don’t go to the State Fair to eat healthy. And “Chicken-Fried Bacon Fries” may be the most unhealthy four word combination in the English language but we can’t deny that this may be the most delicious ever. Beef (not pork) bacon is double-breaded and fried with tempura flour. You have your choice of two dipping sauces including one with passionfruit and Charleston gold BBQ, but we are really excited about Cashville Hot, a brown sugar Nashville-style hot sauce. You can find this heart-cloggin, mouth-watering treat at Soul Bowl inside the Food Building on Cooper St. across from the bandshell.

Deep-Fried Tofuego

Tofu is not for vegans anymore, especially when it’s deep-fried and smothered in a delicious tangy, spicy sauce. These savory bites are served on a sweet and freash slaw of pineapple and napa cabbage. Find this at the Snack House in the Lee & Rose Warner Coliseum at Judson Ave. and Clough St.

Bison Meatball Sub

This hearty and sumptuous sandwich delightfully combines savory bison and fried onions with fresh and bright quick-pickled cucumbers and green onions. This is the result of a collaboration between 3rd generation Eichten’s Bison Farm in Center City and 4th generation Hidden Stream Farm in Elgin and is located in Minnesota Farmers Union Coffee Shop just after the State Fair entrance on Dan Patch Ave.
